The “Faugères” is a blend of Carignan, Grenache and Cinsault. The Cinsault is amazing, yielding luscious aromas of cherry, plums and violet; the Carignan provides colour and concentration and the Grenache gives fragrant garrigue notes of bay leaf and thyme as well as a supple mouthfeel. Grapes are biodynamically farmed, harvested by hand and then sorted. Wine is vinified in gravity-fed, cement cuves, fermented with natural yeasts. Maceration takes place for 3 to 4 weeks with regular, manual punch-downs in cement tanks, never racked, filtered, or fined. After maceration, must is lightly pressed with an old, wooden, vertical basket press. Aged for 2 years in cement and stainless steel cuves. No SO2 is added until a small dose at bottling. This wine is always immediately enjoyable but ages beautifully as well.
