Kojima Sohonten was founded by Yazaemon Kojima in the year 2 of Keicho (Year 1597), of the Azuichi Momoyama period when he founded Kojima Sakaya - which was originally run as a pawnshop on the side as well!
Kanekatsu Uesugi took ownership of the domain from the commencement of the Edo period. Under the clan’s charges, Kojima Sakaya became a purveyor to the family as a sake brewer, and were one of the few permitted to continue operations even after the prohibition of alcohol began during a famine.
‘Kojiyama Untitled #01’ is an expression of being unbounded by categories. Inspired by the yashiori sake of the Kojiki, it is made through the brewery’s own four-step brewing method. This is largely in line with the aim of achieving a complex sake, whilst paying a tribute to low ABV sakes of the past, which were much more palatable when enjoyed with food.
Using 50% polished Dewasansan, in a Kijo-shu style, with sweet nectarine aromas, coupled with melon and cherry flavors with a hint of yuzu peel. Juicy and expansive flavour profiles, with a silty, velvety texture, and crisp smooth finish.
